
Calzone Fridays have become a favorite in my house. By me, because they are easy and mostly hands off. By my husband and kids, because they are delicious. I got this recipe from my mom and am putting it on this blog in hopes to pass it down to my kids one day.
This recipe is very easy and can be done in a bread maker (dough setting) or stand mixer. You can make the filling gourmet or very simple. Best of all, once the dough rises, they only take about 10 min to cook! This recipe yields 2 crowd pleasing calzones.
Mom’s calzones
Dough:
1 cup warm water
3 ¼ cups flour
2 Tbls sugar
2 Tbls olive oil
1 tsp salt
1 egg
1 Tbls yeast
Filling:
1 8 oz can tomato sauce (add basil, oregano, garlic etc to taste)
1lb Italian sausage, browned
1 lb mozzarella cheese, shredded
1 cup parmesan cheese (if desired)
Any other things you like- mushrooms, olives onions, etc.
1. Dissolve yeast in warm water and wait it to foam up or somewhat dissolve.
2. Add sugar and oil.
3. Mix in salt, flour, and egg.
4. Knead 5 min.
5. Let rise for about 45 min. It should double.
6. Add spices to tomato sauce and prepare other fillings.
7. Divide dough in 2 pieces. We will be making 2 calzones. Using ½ the dough, roll on lightly floured surface to about an 11 inch circle. I like to do this on parchment paper to make the transfer easy.
8. Spread sauce on 1/2 of your circle and then add other fillings.
9. Pull plain side down over the filling and seal edges together by pinching.
10. Make 3 air slits in the top and brush all over with olive oil.
11. Transfer to baking sheet immediately. Bake in 500 degree oven for 6 min (or until golden brown) May be served with additional sauce. Serves 4-5.
